Cumin flavored roasted cauliflower is an easy recipe that can be made really quickly in no time. It’s a perfect side dish for any main course or it can be served as an appetizer with the creamy cilantro cashew sauce.

If you ask any vegetarian what’s their favorite vegetable, the cauliflower would be their first pick. Because cauliflower tastes amazing in all forms; either steam cooked or sautéed or fried or baked or roasted or even in soups they taste just wow! So it’s obvious that this vegetable is my favorite too 😉

There are only few recipes that taste great with minimal ingredients and this is one of them. I am sure the ingredients used in this recipe is easy available in all homes. And I can strongly say this roasted cauliflower will be in your menu at your next house party. These are super simple to make and can feed large crowd.

As the recipe name says, these are cumin flavored cauliflower, roasted in the oven until the cauliflower turns golden and served it hot with the freshly grinded cilantro and cashew sauce with a dash of Greek yogurt on it

The Cilantro Cashew sauce (pesto) is the star of this dish. You can’t count how many florets you have ate by dipping into this creamy sauce. The Cilantro Cashew sauce is pretty addictive. You can’t stop eating!

Actually you can call this sauce as Cilantro Cashew pesto also but the water is added here for the saucy consistency. If you grind without water then you can use this pesto for pasta also. The creamy cashew cilantro pesto will make the dish extra richer and tastier.

The best thing about this dish is they are low in carbs and completely gluten free 🙂

I have roasted the cauliflower in oven but you can pan roast it too. They taste great when they are roasted in cast iron pan 🙂 For the sauce you have to put everything together into the blender or food processor and grind it to a smooth texture. Isn’t simple ? 😉

Let’s see how to make cumin roasted cauliflower:

You need just 5 handy ingredients to make this cumin roasted cauliflower.

First clean the cauliflower and cut the cauliflower into small medium sized florets. Soak the cauliflower florets in salted hot water for 5 minutes to remove dirt’s if presented in the cauliflower.

Dry the florets with a tissue and then arrange them on a baking tray.

If you doubt that the cauliflower may stick to the baking sheet then you can line a parchment paper and then add the cauliflower florets on it.

Add some salt, roasted cumin and pepper powder and coat the cauliflower.

Add the olive oil and massage the cauliflower so that the spices spread evenly in floret and meanwhile preheat the oven to 400 degree F.

Don’t over crowd the tray with florets. Give enough space for the florets to cook through.

Place the baking tray into the oven and bake it for 20 minutes. (I flipped the cauliflower florets in between with the help of tongs after 12 minutes, but it is not mandatory to flip)

Once the cauliflower is out from the oven serve it hot.

You can serve this roasted cauliflower as a side or you can serve it as appetizer with the “Cilantro Cashew dipping sauce”

I also top the roasted cauliflower with a dollop of creamy Greek yogurt to enjoy:)

Let’s see how to make creamy lemony “Cilantro cashew sauce”:

To make this Cilantro Cashew sauce, soak the cashew in ¼ cup of hot water for at least 1 hour. (You can also soak the cashew in normal water for 6 hours and then use).

Chop the coriander leaves/Cilantro and add it to the food processor or blender.

Add the soaked cashew along with the remaining water.

Add the remaining ingredients garlic, lemon juice, olive oil, pepper powder and salt into the blender.

Blend it to a smoothly, if need add some water for the saucy consistency.

Transfer it to a bowl and serve it with the cumin roasted cauliflower.

You can also use this sauce as condiments for various dishes, pesto for pasta, etc.,

Ingredients

Rosted cauliflower

  • 1 head cauliflower around 4 cups of cauliflower florets
  • 1 tablespoon ground cumin
  • 1 teaspoon ground pepper
  • 2 tablespoons olive oil
  • salt

Cilantro cashew sauce

  • 1 bunch cilantro or coriander leaves
  • 1/4 cup cashew (soaked in 1/4 cup of hot water for an hour)
  • 4 nos garlic cloves
  • 2 tablespoons lemon juice
  • 1 tablespoon ground pepper
  • 1 tablespoon olive oil
  • salt

Instructions

  1. Clean the cauliflower and cut it into medium sized florets, meanwhile preheat the oven to 400 F.

  2. Place the cauliflower florets on a baking tray and add the olive oil, salt, ground pepper and cumin powder and toss it well.

  3. Bake it for 20 minutes, until the cauliflower turns golden.

  4. For making the cilantro cashew sauce add the mentioned ingredients for “to sauce” into the food processor or blender and grind it to smooth. Add water to adjust the sauce consistency.

  5. Serve the roasted cauliflower hot with the cilantro cashew sauce and Greek yogurt and enjoy.

Recipe Notes

  • If you need crunchy roasted cauliflower, bake it not more than 17 minutes.
  • You can line a parchment paper and then add the cauliflower florets for easy cleaning of the baking tray after cooking.
  • Roasted cumin powder gives a wonderful aroma for the recipe so if you don’t have cumin powder, roast some whole cumin’s and grind it a powder and use it in the recipe.
  • If you want the sauce to be thicker, don’t add any water while grinding.
  • Soaking the cashew is an important step to get smooth and creamy sauce.
