The tastiest pulao recipe you have ever tasted with minimal ingredients.  You can use sweet corn or fresh boiled corn or frozen corn for the recipe. The whole spices bay leaf, cloves, peppercorn, cumin, cardamom gives the wonderful flavor to the corn pulao recipe.

What is pulao?

Pulao is a mildly spiced rice recipe made by cooking basmati rice with either vegetables or meat with flavorful whole spices. Pulao is also called as pilaf in Middle Eastern and European regions. Easy to digest rice which are kids friendly and quick to make using one pot.

Corn pulao recipe variations

There is a lot variation you can do with this basic corn pulao recipe. Adding some fenugreek leaves to this recipe will turn into corn methi pulao, addition of spinach turns the recipe to corn spinach pulao, and if you add peas then it’s a corn peas pulao.

How can we make this corn pulao recipe?

This corn pulao recipe is a one pot rice dish. You can make them in stove top method, pressure cooker method or Instant pot method. I have mentioned all the methods briefly below. For perfectly cooked rice, the amount of water used to make the pulao important, so don’t forget to check the amount of water used since it varies differently for all the three methods.

Corn pulao recipe using stove top method:

  • Wash and soak the basmati rice for 15 minutes.
  • Heat a heavy bottom pot or pan add oil a ghee+ oil followed by whole spices (bay leaf, cloves, cardamom pod, cinnamon stick and star anise)
  • Now add cumin seeds and peppercorns followed by sliced onion, sauté it for 3-5 minutes.
  • Meanwhile in a blender add ginger, garlic, green chili, mint, and cilantro and make it to a smooth paste with the addition of water.
  • Once the onions turns translucent add turmeric powder followed by the mint, cilantro paste.
  • After 2 minutes of sautéing, add the corn kernels, rice, and salt and mix it well.
  • Add 2 cups of water and close the pan with lid. Cook on medium flame for 15-20 minutes until the water is absorbed.
  • Serve the hot corn pulao with raita on side.

Corn pulao recipe using pressure cooker method:

  • Wash and soak the basmati rice for 15 minutes.
  • Heat the pressure cooker , add oil a ghee+ oil followed by whole spices (bay leaf, cloves, cardamom pod, cinnamon stick and star anise)
  • Now add cumin seeds and peppercorns followed by sliced onion, sauté it for 3-5 minutes.
  • Meanwhile in a blender add ginger, garlic, green chili, mint, and cilantro and make it to a smooth paste with the addition of water.
  • Once the onions turns translucent add turmeric powder followed by the mint, cilantro paste.
  • After 2 minutes of sautéing, add the corn kernels, rice, and salt and mix it well.
  • Add 1 and ¾ cup of water and close the pressure cooker with weight. Cook on medium flame for 2 whistles.
  • Once the pressure is released naturally, serve the hot corn pulao with raita on side.

Ingredients

  • 1 tbsp Ghee clarified butter
  • 1 tbsp Oil
  • 1 Bay leaf
  • 2 Cloves
  • 1 Cardamom pod
  • 1 inch Cinnamon stick
  • 1 Star anise
  • 1/2 tsp Peppercorns
  • 1/2 tsp Cumin seeds
  • 1/2 cup Onion sliced
  • 2 Green chili
  • 4 Garlic pod
  • 1/2 tsp Turmeric powder
  • 1/2 inch Ginger
  • 10 Mint leaves
  • 1/4 cup Cilantro
  • 1/4 cup Water
  • 3/4 cup Corn kernels
  • 1 cup Basmati rice soaked for 15 minutes
  • 1 1/4 cup Water
  • 2 tsp Salt

Instructions

  • Wash and soak the basmati rice for 15 minutes.
  • Press the “SAUTE” mode on the Instant pot, add oil ghee+ oil followed by whole spices (bay leaf, cloves, cardamom pod, cinnamon stick and star anise)
  • Now add cumin seeds and peppercorns followed by sliced onion, sauté it for 3-5 minutes.
  • Meanwhile in a blender add ginger, garlic, green chili, mint, and cilantro and make it to a smooth paste with the addition of water.
  • Once the onions turned translucent add the turmeric powder followed by mint, cilantro paste.
  • After 2 minutes of sautéing, add the corn kernels, rice, and salt and mix it well. Press “CANCEL” button.
  • Add 1 and ¼ cup of water and close the Instant pot with the lid and place the valve to sealing position.
  • Press “MANUAL” mode and cook it for 4 minutes on high pressure.
  • Once the pressure is released naturally (after 10 minutes), serve the hot corn pulao with raita on side.

Notes

In the recipe, instead of water you can add coconut milk for the extra rich flavor.
