Homegrown tomatoes are my favorite’s especially cherry/grape tomatoes. I always wait for summer to plant tomatoes and at the end of the harvest definitely I will make this “Tomato cucumber salad” 🙂
If you know me I love lemon flavor in everything, from appetizers to desserts so why not in salads? This lemon and olive oil dressing with the garlic flavor elevates the salad to the next level. Come out of the old store-bought mayonnaise dressing and try this!
I always prefer English cucumbers for salads, because they give perfect crisps in salads and to make the salad extra delicious I have added red onion! Here goes the recipe.
Ingredients:
For salad:
Grape/Cherry tomatoes – 1 cup
Thinly sliced Cucumber – 1 cup
Thinly sliced Red Onion – ½ cup
Finely chopped coriander leaves – 2 tablespoons
For dressing:
Olive oil – ¼ cup
Large lemon – 1
Salt – 1 teaspoon
Freshly ground pepper – 1 teaspoon
Minced garlic – 1 teaspoon
Instructions:
Using a Sharpe knife cut the cherry tomatoes to half.
Add the tomatoes into a large bowl.
And then add the thinly sliced onions, cucumbers to it and set aside.
In a separate bowl, squeeze the juice from one lemon and whisk together all the dressing ingredients.
Now add the salad dressing into the salad bowl and toss it.
Keep it refrigerated until serve.
NOTES:
You can use any type of tomatoes for this salad, if you are using larger ones then cut it into quarters.
Refrigerating the salad for at least an hour helps the salad to absorb the dressing.
You can feel free to add any type of cheese to it if you want.
