Cumin roasted cauliflower with cilantro cashew sauce

Cumin flavored roasted cauliflower is an easy recipe that can be made really quickly in no time. It’s a perfect side dish for any main course or it can be served as an appetizer with the creamy cilantro cashew sauce.

Rosted cauliflower

  • 1 head cauliflower around 4 cups of cauliflower florets
  • 1 tablespoon ground cumin
  • 1 teaspoon ground pepper
  • 2 tablespoons olive oil
  • salt

Cilantro cashew sauce

  • 1 bunch cilantro or coriander leaves
  • 1/4 cup cashew (soaked in 1/4 cup of hot water for an hour)
  • 4 nos garlic cloves
  • 2 tablespoons lemon juice
  • 1 tablespoon ground pepper
  • 1 tablespoon olive oil
  • salt


  1. Clean the cauliflower and cut it into medium sized florets, meanwhile preheat the oven to 400 F.

  2. Place the cauliflower florets on a baking tray and add the olive oil, salt, ground pepper and cumin powder and toss it well.

  3. Bake it for 20 minutes, until the cauliflower turns golden.

  4. For making the cilantro cashew sauce add the mentioned ingredients for “to sauce” into the food processor or blender and grind it to smooth. Add water to adjust the sauce consistency.

  5. Serve the roasted cauliflower hot with the cilantro cashew sauce and Greek yogurt and enjoy.
